I took these to a meeting this morning and they got rave reviews. These are a delicious, moist, yet good-for-you muffin. Filled with good things like oatmeal, banana, cranberries, and healthy oil – not butter! – you don’t have to feel guilty eating these. Even the amount of sugar is quite low. The sweetness comes from the banana. They go together very quickly with yummy, nutritious results. Kids will love them – just make them sound like a treat not something that is good for them.
The bananas should be at least starting to go black for the best flavour and moisture in the muffin. I buy extra for a couple of recipes I have – in the past I have had to hide some to let them ripen enough!! If you are not ready to bake when the bananas are ready you can simply throw them in the freezer and thaw when ready to use.
To make these first thing in the morning, you could measure out the dry ingredients the night before in one bowl and combine the wet ingredients in another bowl and place in the fridge. Simply combine the two, add the cranberries and spoon into the muffin tin and they can bake while you have your shower. They may take a few minutes longer if the liquids are very cold.
