Looking for a great appetizer to take to a get together or one you can make ahead for Thanksgiving dinner??? This tapenade gets raves whenever it is served and you don’t even have to like olives to enjoy it. It keeps for weeks in the fridge so is a great make-ahead and also great to have on hand when someone drops by. Do be sure to use a good balsamic vinegar in this – you should like the taste of it and it shouldn’t be too sharp. And DO check for pits – I didn’t once and never again!! Just imagine looking for that one little pit in the whole gooey mixture!! I ended up having to spread it out to find the pit, dumped it back in the food processor and…there was another one in there!! Ugh!! The one good thing is that the pits are so hard they don’t get broken up by the food processor so the whole mixture is not ruined. Just lightly pinch each olive as you put it in the food processor. Trust me – it’s worth the extra few seconds!!
