This is a basic recipe with many possible variations made by simply changing the cheese(s) and/or the olives. You could even try sun-dried tomatoes as well as or instead of the olives.
½ cup mayonnaise (not Miracle Whip unless you really like that taste)
2 garlic clove, minced
2 cups Kraft Italian Blend grated cheeses*
½ cup kalamata olives – optional if you don’t like olives!!!
1 long baguette – French bread or Ciabatta
Preheat broiler.
Mix mayonnaise, garlic, grated cheeses, and olives. This may be done ahead and kept in the fridge.
Slice the baguette lengthwise. If you prefer a crustier bread, place the baguette halves on a cookie sheer, cut side up, under the broiler for just a few minutes to brown lightly. Let cool slightly.
Spread the cheese mixture evenly over the bread making sure to get right to the edges.
Place the baguettes, on the cookie sheet, about 6 inches from the broiler and broil until done to your liking – just melted or starting to bubble and brown.
Enjoy!!
*Usually, I grate my own cheeses – really!! – but I do buy the Italian blend for it’s great mix of 4 different cheeses.
