When I was growing up my mother’s friend used to make a cookie very similar to this. Her recipe required carefully rolling out the dough and cutting out perfect little circles to put these together. This recipe is a variation which I find much quicker and easier – simply pressing the balls of dough into thin discs.
These versatile cookies are delicious on their own or can be put together with jam instead of the date filling. Eat them crispy or let them soften – your choice.
