For years in our house, Sunday mornings meant pancakes. Not that they didn’t show up on the occasional weekday morning as well. They are so easy and quick to make and so much better than a mix!!! If you have been using a mix, do try this simple recipe and see what you think.
I find that my electric griddle is part of what makes it so easy – just set the temperature and let it heat. No adjusting the heat under a frying pan, etc. My griddle is also nonstick and generally I don’t grease it at all. The exception is when I’ve added something sticky like blueberries. Then all that is needed is a few drops of oil and a quick wipe with paper towel. There should not be oil pooled on the griddle. I definitely do NOT recommend using a spray as it can start to form a film on your griddle.
To know when to turn the pancakes – they should only be turned ONCE – look for bubbles forming and the edges drying. Peek under to see if they are brown enough then run the flipper under them to make sure they are loosened from the pan before flipping. Flipping can take practice but they’ll still taste fine.
Leftover pancakes can be cooled on a wire rack – not a plate as they will go soggy. Then freeze them for quick weekday treats. Reheat in toaster oven or my husband just uses the regular toaster.
