The second thing you should know is that the only way you can kill the yeast is with too high a temperature. Too cool will slow it down but yeast will work even in the fridge. If you don’t have a candy thermometer, test the water used to dissolve the yeast on your wrist where it should feel only slightly warm – the yeast will work just fine.
